GRAD°WANDERUNG - alcohol-free wine, refined by the hand of a true pioneer
This unique collection offers more than just alcohol-free wine. It is an exquisite combination of dry, still grape wines, gently dealcoholised and refined with carefully selected juices, hydrolates, herbs, flowers and spices from the region.
Our gentle dealcoholisation process, vacuum distillation, removes the alcohol using maximum time and minimum temperature. This method allows us to preserve the character of each wine while reducing the alcohol content. Each of the alcohol-free creations is labelled with the degree at which the process was used.
We collect the aromas that are lost during dealcoholisation as flavour water and return some of it to the drink at the end. This is how we maintain the fragrance and complexity by low residual sweetness.
With our six new products, we are creating a revolutionary world of flavour and completely new dimensions of enjoyment.

Our non-alcoholic wines are produced IN-HOUSE using a complex vacuum distillation process that takes place at low temperatures of 32 to 37 degrees and under a high vacuum (50mbar) to preserve the flavour of the wine. By finely spraying the wine in two seven-metre-high columns with a large stainless steel contact surface, the alcohol is gently extracted, while the aromas are recovered using an innovative method in which ice-cold dealcoholised wine is sprayed in the exhaust air. We then combine this technique with our expertise to refine the wine with around 200 spices, 70 herbs, flowers and home-grown hydrolates - resulting in alcohol-free, dry wines.

The Zwölberich winery is known for growing exclusively organic and biodynamic wines according to Demeter guidelines. The previous owner, Hartmut Heinz, is enthusiastic about our work and has decided to offer us his entire reserve of red wine in order to generate urgently needed funds for the winery.
One man's sorrow - another man's joy
The result is a red wine cuvée made from Dornfelder, Frühburgunder, Spätburgunder and Regent. All wines are matured in wooden barrels from the 2018-2021 vintages and were refined with blackcurrant, blackberry and blueberry juice after dealcoholisation. To round off the flavour, we also used frozen ground flowers and herbs, which are macerated cold with the spices and thus contribute to the full-bodied, spicy taste.
